Why can I not change my status to retired? We retired in 2016 but no one has been able to change our status

What "status" do you mean?  Retired is not a filing status.  The choices for a filing status are Single, Married Filing Jointly, Married Filing Separately, Head of Household or Qualifying Widower.  Look on the top of your Form 1040 and you will see them.

If you want to say "retired" for occupation you can put that in My Info.  The IRS does not care what you say for occupation.
