can I type my information in myself and not have Turbo accessing my financial institutions?

You are not required to import that data. Choose "I'll type it myself" and enter the information by hand.

Yes, you can manually enter your information. When you get to the question asking you to select your financial institution, just select type it in myself or Change how I enter my form>>Type it in myself.
