The IRS does not have my correct address or my direct deposit information despite having filed 2019 taxes with TurboTax.
I filed my 2019 taxes with TurboTax and they were accepted. Yet, the IRS has an old address on file and they're sending the stimulus check to an address overseas. Why can the IRS not read or easily update information from the TurboTax submitted taxes? I realize this might be an IRS issue, but it also may have something to do with the Intuit e-file systems not functioning properly in some way.

Once your return has been accepted, it means your return is in the hands of the IRS. Once your return is accepted, TurboTax has nothing to do with a tax return being processed or when a refund would be issued.
The IRS may not have fully processed your 2019 return in order for your new information to show. Once they fully process your 2019 return, they will have your updated information. Hopefully, they will use the information from your 2019 return for your stimulus money. If they don't, once the IRS opens back up, you can contact them about your stimulus check.
It is taking the IRS longer to process returns since they are closed. They are still processing e-filed returns but the 21 days (business days) is not the standard now due to Covid-19. The IRS is not processing mailed in returns at this time.
All you can do now is keep checking the IRS website, Where's My Refund, the website updates once a day.
To add, make sure you have put in a forwarding address with your post office. I can give you information from the IRS about changing your address, but unfortunately, the IRS is not processing mailed in returns.
