as a total and permanent 100% service disabled veteran I know I don’t have to report my disability income, but if I receive employment, income or income from government contracting as a service disabled veteran, would I have to report that ?

Any taxable income you receive is reported on your tax return, regardless if you are a 100% disabled veteran.

And as you have stated, none of your VA disability income is entered on a tax return.

Yes, you would report any taxable income (does not included your VA disability income) on your tax return.   To see if you have a filing requirement, check this chart.
