Can I use my last paycheck stub to file taxes

No, your paystub does not have the correct information to file a return.  You need to wait until you get your W2.  The IRS gets copies of all W2's & if your information on your return is not what is on the W2, then your return & refund can be delayed.

 

The IRS is not even accepting returns at this time.  Not to mention it is way to early to file, things can still change for the 2020 filing season.
