Just filed my married filed jointly return and forgot to add one of the three 1098E's. The one I forgot to add is in the amount of $2,088.71. The total on my tax return (without adding the $2,088.71) was $4,558. Would I get more money if I filed a amendment and added the $2,088.71? If so, what is quickest/easiest way to do that?

No, the adjustment is based on interest paid up to $ 2500. It seems you received the largest deduction on your original return.
