I filed my 2020 federal, New York non-resident and New Jersey tax returns over a week ago and they are still in a pending status. Why? Is this a software problem?

I just spoke with a TT representative on the phone who told me that my returns have been filed but not accepted yet. I am skeptical give all the posts I see with others in the same situation. I will wait a couple more days to see what happens.
Your e-filed return is still in pending on the server because the IRS is currently accepting/rejecting/processing returns. Sometimes it can take more than 48 hours to process. Only a few returns were accepted early in a test batch. Everyone else has been waiting. Please see the TurboTax FAQ below for more information on pending returns:
