I filed my taxes back in the beginning of February and they were quickly accepted. At the end of the month, I got a letter requesting form 1095-A. and form 8962. I lost that letter that I was supposed to send back with them, but when I spoke with someone at Intuit, they said I could simply fill them out and send with an explanation and didn't need to file an amended return. This was right before COVID became a massive thing, and now its been over 3 months since I sent these documents in. Is it possible they simply lost my forms with how crazy everything got and I should send them in again? Should I file an amended return? Any help is appreciated.

Do not do anything but wait. The IRS did not process any mailed documents for many weeks. They are still only process a minimum amount of them if any because their regional tax centers were all closed for some time. They will eventually get around to processing return return with the documents you sent in. Sending them again or amending your return would not do any good.
