I used my 2016 state returns to prepay 2017 tax, what if I have returns next year, what happens to my $321 that was taken? Where do I find a statement?

It will be refund to you along with your entire return.  Next year, you will add that amount to your state return ($321) just like any other tax payment (i.e. the withholding from your W2) and, if you are due a refund, then you will get it refunded to you with the rest of your refund.  There will be a place for you to enter this amount in TurboTax and the program will do the calculations

While you won't do it now because it will be for next year, I have included a screenshot of the screen where you would have entered this had it been for this year, just for your reference (screenshot has the Federal one highlighted but the state option is right below it).  It gets entered in the Estimated and Other Income Taxes section of the program (you can search for "refund applied to this year").
