Got additional w2s. Can I amend just my federal? I've recieved my refund from them already but there may be a delay with my state refund as they are requesting more info?

Filed fed and state taxes. Then recieved a new w2 we forgot about. Also got a w2 (not w2c) that had corrected info on it.  Need to amend returns now but In the meantine we recieved the federal refund. But not the state. Were waiting to get the states so we can amend. Then State sent a letter asking for documents to "protect against identity theft" They want all w2s, 2018 paystubs, drivers license lots of info...within 30days.  So nothing will be coming from them unless we do this. Not sure if its connected to our omitting those w2s.  So do we amend our federal only since we got the refund already from them? And wait til state gets the requested paperwork and see what they return to us then amend? Or wait til we can amend both at the same time?  Dont we have to amend our state later no matter what if we amend the federal?

You can proceed with amending your Federal return and wait to see the resolution of your open case with the state before amending the state return.  You are not required to amend the state return if it's the same issue and it's resolved without an amendment, or if there would not be a change to your return if you did file an amendment.

It might be easier to wait until the state case is resolved, just in case they find something else you overlooked, but if you end up owing the IRS because of the additional W-2, you want to be sure to file and pay "on time" that is, by April 15th.
