I mistakenly documented that I can be claimed as a dependent by my parent, even when I have been financially independent since I was 18. I was able to amend that using TurboTax Online, however, for some reason my adjusted gross income and taxable income numbers are changing without me doing any changes. It shows a corrected amount that is around $4000 less than what my W-2 shows.

When you prepare an amended return, the 1040 form starts over. Since the only thing that changes was to uncheck the box that was originally checked to say you could be claimed as a dependent, everything on the form 1040 will probably be zeros.
Look at your form 1040X. Column A. Original amount and Column C. Correct amount should be identical . Column B. would show no change.
Yes, my form 1040X is showing that in lines 1,5,6, and 7, columns A and C are not identical and Columns B are showing changes that I did not input.
Somehow changes were made to the tax return in your file at some point. You will need to cancel the amended return and start over. Make sure the original return you start with before you start to amend again is exactly like the return you originally file. If it isn't, make the changes to make it identical. Then you can start the amended return again.
One other thought. Is their a possibility you have more than one account and are amending a return that was started in the other account and not the one you originally filed? Here is a link to look for other accounts:
