What do I submit with my amended form 1040X? Do I just mail the 1040X and the 1098-E that caused the adjustment? Do I have to also redo my 1040 and send in that as well?

Just need to send in the information of the 1098-E. If that was the only reason that he IRS rejected your return. Don't have to redo the 1040. Just be sure to sign the 1040X. It will take some time for the amendment to be processed, normally a few months on average.

@rbr112100 Thanks for the answer! They didn't reject my return, I just happened to get an additional 1098-E after my initial return was processed! So even if I don't have to re-do my 1040, would it be a good idea to at least include an updated Schedule 1 form since my 1098-E is affecting my student loan deductions?

Your best bet would be to contact the IRS, inform them of the adjustment you have to make. Let them know that your prepared to send in an amendment.
