Son-in-law filed for divorce Sept 2016. 2015 taxes filed as MFJ. No kids, own house, live IL. MFS would benefit her for assistance. Can 2015 taxes be refiled as MFS now?

Would probably take standard deductions. Filed itemized deductions. Would lose student loan interest paid.

Son-in-law filed for divorce Sept 2016. 2015 taxes filed as MFJ. No kids, own house, live IL. MFS would benefit her for assistance. Can 2015 taxes be refiled as MFS now?

No. A joint return can't be amended to separate returns after the filing deadline (which would have been April 17, 2016; or October 17, 2016 if an extension was properly filed.
