If you don't enter anything that goes on Schedule C (i.e. you have a blank form), it won't file Schedule C.  TurboTax does not submit forms and schedules that aren't actually a part of the tax return.  If you file using the Self-Employed version you won't have to clear and start over (the only way to downgrade), but you will end up paying for the more expensive version.  The only other option would be to contact customer service.
