Is there a way to "downgrade" from TurboTax Premier to the Deluxe edition, once you've got everything entered but have not yet actually filed?

Unfortunately, no.  There is no way to switch from Premier to Deluxe (downgrade) once you have started your return.  In order to switch, you would have to Clear and Start Over.  For information on Clear an Start Over, see the following FAQ:

This is very inconvenient to have to start over completely after not needing premier software and only needing deluxe.  What a waste of my time!
