It shows me as earning about $1300 more than I did.
I called the IRS, and they told me to send proof of what I did earn with my taxes.
I asked if I could just adjust the difference in business expenses, and I was advised to contact a tax advisor. This seems like the easiest way to resolve the issue.

The sender refuses to correct it is the biggest deal here. Make sure that you have that in writing. If you've been calling on the phone you go right now and email them to get them to tell you no and why they won't do it.
Then you can absolutely correct it on the schedule C by creating an expense or a return for the extra $1300. But that lets the company that is sending out incorrect 1099s off the hook.
If you submit the return by mail with the correct amount on your schedule C along with copies of the emails and a copy of the 1099-NEC (and preferably the bank statements showing deposits from the payer) and then let the IRS deal with the company that issues incorrect 1099s.
