I have two more Ameriprise Financial tax packages to enter for my wife under Wages and Income, but it's not giving me a prompt. How can I do that?

How do I force Turbo Tax to the screen to enter Ameriprise Financial to enter the Package ID and the Document ID?

You should be able to enter them by going back to "Wages & Income" and then depending what you are entering (Form 1099-DIV/INT "Interest & Dividends" or if it is a Form 1099-B, "Investment Income" and click on the prompt to "Add investments."  You can then select to import or skip import.

It will look something like this:
