My Fiance and I bought a house last year. We are co-owners on the loan but her SSN is on the 1098. Can she claim the full mortgage interest amount?

We both pay 50% of the monthly payment, but it would be easier for her to just claim the full amount so we don't have to itemize our taxes.

No, it must be split according to what each of you actually paid. The tax code allows the person who actually paid the mortgage interest and property taxes to take the deduction for the amount that person actually paid. If (s)he did not pay 100% of the mortgage interest and property taxes, (s)he can not deduct 100% of the mortgage interest and property taxes.
