I am a F1 Student since August 2018, I am currently on OPT and applied for STEM Extension. Do I need to pay Social Security and FICA Taxes?

Yes.  The question of whether or not your visa (permission to be in the US as a student/trainee) will be extended, does not change the tax laws that trainees who are in the US more than 5 years are subject to employment taxes.  Be sure to notify your employer of your status.
