1099 Pilot State Filings and Meal Deductions

If a 1099 Contracted Pilot resides in Missouri, does work for a company based in Mississippi, and flies projects for the Mississippi company in several states what state tax filings are required? 

Also, related to Schedule C meal deductions - there is a $50 per diem for meals. But since the entire job is away from the tax home, would any meal expenses over $50 be deductible? If so, 50% or 100% deductible?
