I am an independent contractor (outpatient mental health therapist) and changed practices this year in May.
I received a 1099- NEC from my previous payer and then a second one from my current payer. Do I need to enter both forms, or can I just enter total income? How do I enter both forms?

You can just enter the total. Actually I would just enter your total income as Other self employment income or as Cash or General income. You don't need to get a 1099NEC or 1099Misc or 1099K. Even if you did you can enter all your income as Cash. Only the total goes to schedule C.
How to enter income from Self Employment
You can enter both forms. Since both 1099-NECs are from the same line of work, they will flow to the same Schedule C on line 1.
