In 2024, I worked at home as an independent contractor for a different company (not Uber), so I've already added that self employment income (1099 NEC) on my taxes.
I've delivered for Ubereats as an independent contractor every year since 2019, and have always filed this on my taxes. However, I did not do any deliveries or make any income for Ubereats in 2024.
I already tried skipping the ubereats income section, but when I progress, it keeps having me go back to "review". I tried putting in $0 for the income and expenses, and it still says it needs review.
I don't want to mark the business as closed, because I plan on ubering at some point this year in 2025, and will file that next year.
I'm unsure if I should just press the trash can and delete Ubereats entirely? Would that be the same as marking the business as closed?
And if I do have to delete Ubereats in order to file my taxes, how will this effect me when I have to re add ubereats to file my 2025 taxes in 2026? Would the date I started using my vehicle for business then change from 2019 to 2025?

Filing a Sch C for your business, the IRS knows there are up and down years. Here is what you need to do:
Always keep a copy of your return for your records, we only hold them a a little while vs what the IRS requires of a business owner.

"when you start again, you will enter your vehicle and other assets using the depreciation schedules - same dates and dollars as used before."
Does that mean next year, when adding my vehicle, and they ask me the question I've circled in red (screenshot below), I would put the same exact start date of (x/x/2019)? I took this screenshot from my taxes that I'm currently working on, before I trash/delete the Ubereats income.
Yes, if it is for the same vehicle, then you will enter the same starting date for that until you stop using it.
