I have 1040ES Vouchers to pay estimated taxes for 2023.  What would happen if I do not plan to pay the estimated taxes and just pay the amount owed at the end of 2023 tax year??

The only thing that might happen is you would owe an underpayment penalty for not having paid enough tax in throughout the year. This is in addition to any balance due.
