I'm in TurboTax Business trying to enter employee wages and the only columns are for Officers and Shareholders. The help file says there's a column called All Other Employees, but it's not there!

You need to return to the About Your Business section and edit the question as to whether you paid employees - obviously ensure that the question is answered in the affirmative - "Yes" (see screenshot).
Thank you! I did have a Yes there, but a couple of the check boxes were incorrect.
