Is there a way I can theoretically see what my taxes would look like if I didn't work one of my jobs? Don't want to amend, just want to see

My return was already accepted, I just want to see what I would have owed if I didn't work one of my jobs with a W2

You didn't say whether you are using TurboTax Online or the desktop TurboTax software.

If you are using the desktop TurboTax software there are several ways that you could do this.

(1) In forms mode use the What-If Worksheet. Check the appropriate box at the top to copy the figures from your tax return to a new column. Then enter the reduced amount of wages.

(2) Use "Save As" on the File menu (not the File tab) to save a copy of your tax return with a different name. In the copy, delete the W-2 that you want to exclude.

(3) Not recommended: In the tax return that you filed, delete the W-2. After you look at the results, exit without saving. I don't recommend doing this. You have to be very careful that you do not save the modified return unintentionally. TurboTax sometimes saves without asking you. Don't use this method unless you have a backup copy of the .tax2024 data file for your accepted tax return.

In TurboTax Online there is really no good way to try out a what-if or alternative scenario. Instead, you could use TaxCaster to calculate how your tax return would come out without the W-2. But this requires entering a lot of information from your tax return.
