If you are reporting your Uber income net of their expenses (after they have taken them out) then no. If you are reporting your gross income from Uber and then deducting their fees and expenses on your tax return, then yes.
Assuming you have records or receipts of your actual tolls, the simplest way is to enter your gross income from Uber, or Lyft, etc. and then deduct your own toll costs as an expense (in addition to other expenses). I do this in a spreadsheet (along with a whole bunch of other data that I use to make sure I'm actually making money). The statement details from Uber (not sure about Lyft as I haven't driven for them for quite a while) are complicated and mean more to Uber than they do to me.
