On an amended return do I need to send in all the forms and schedules- about 40 pages worth?

No, you do not need to send all forms and schedules. You only need to send Form 1040x and the Forms/Schedules that changed. For example, if added something to the Itemized Deduction you would include Schedule A. Or if you added a W-2 then you would include the W-2.
