Can we claim gas expenses when working for DoorDash on our taxes? And can it be down with only my bank statements or do I have to have receipts?

You have self-employment income.   You need to be keeping very meticulous records of your expenses including gas and mileage.  You will be paying self-employment tax for Social Security and Medicare, and ordinary income tax.  If you use online TurboTax you need to use Premium, or if you use the CD/download, it can be any version.  You will be preparing a Schedule C to enter your business expenses like gas, etc.

You can deduct your actual vehicle expenses, or you can deduct the standard mileage rate (65.5 cents per mile), which includes allowances for wear and tear, fuel, maintenance, and repairs.  The details, including the specific records you must keep, are described in publication 463, chapter 4.
