TurboTax is reporting my Cryptocurrency holding period as long term gains. How do I change this? Can this be changed? They were not long term gains.

Correct the purchase or sell dates to correct the holding period.

I do not have the matches for when I bought and sold each cryptocurrency. That wasn't given to me by Cash App. I have my summary of transactions and the 1099 that they provided. 

Are you familiar with how TurboTax automatically does Form 8949? 

If you haven't matched your buys and sells, what are you using for "cost" ?
