We received a check on 1/2/17 but it was dated 12/25/2016. The customer sent us a 1099-misc. for 2016. Do I show the income on 2016 tax return even if I did not receive it in 2016?

Yes, if the 1099-MISC is for 2016 then you would report it on your 2016 return.  Because the check was cut in 2016 the income has to be reported on your 2016 return.
