We had an au pair from May through the end of 2020. I paid a large fee to the au pair co. plus $200 to the lady. For Turbotax, is that an org or a person that I paid?

If you paid the company for the au pair wages (which sounds like the case), you will enter the organization information for the Dependent Care Credit.  If you paid the $200 separately/directly to the au pair, you could enter her information separately.
