My spouse is a non resident alien and has no income. If I file choose Married Filing Separately,

I got married in 2021. I learned my tax category would be basically Married Filing Separately or Jointly.  Since my wife does not have any income in the US or the country she lives in 2021, if I choose Married Filing Separately, would my wife need to file taxes or take any action?

Filing jointly would no doubt be better for you. This IRS article explains what you must do.
