I work at a ranch part time and am paid cash with nothing taken out and it is not recorded. Do I file it as a business or what?

Yes, you will need to report this income as self-employment income.  You may not own a business, but your business if "you".  You're considered an independent contractor.  To enter the cash income you've earned, see the instructions below from a TurboTax FAQ.  TurboTax will generate for you a Schedule C, and you'll also owe self-employment tax on your net income over $400 for the year.  If you have any business expenses associated with this income, entering them will lower your tax liability.
