I don't see ESPP, RSU etc on our two stock transactions, but both are related to the company my husband worked for. Would that make them employee stock?

Employee stock is received as part of a compensation plan.  So (in a variety of forms) employee stock is a replacement for wages.  Just having stock in the company where you work is not the same thing.  So unless there is some indication that your husband received these as a part of his compensation package then you should just enter them as they are presented on the 1099-R.
