I am a stay at home mom. Would would I list as the occupation?

The IRS uses "occupation" for statistical purposes only.   You can put anything you want, like "Domestic Goddess"

How you describe your occupation is up to you. You might say, "Homemaker". The IRS doesn't require specific wording. They do publish information on occupations reported without sharing personal data.
