Can your currency be changed back to USD if you’re currently in another country but receiving American paychecks? When filing, mine is coming up in yen.

Yes, foreign traditional currency can be exchanged back to USD without being taxed. 

However, anything you earn is taxed as equivalent US dollars on your tax return (regardless of the currency).
