Can I combine both Ubers service fees and booking fees into one category since I am charged one total combined fee for both from Uber or do I need to list separately?

You can combine the fees into one category.  As I understand it, Uber deducts both these fees from your earnings.  The IRS does not need to see the breakdown on the fees Uber charges you.
