I had to pay for specific vaccines and a passport and visa for a mission trip to Brazil. I paid for them out of pocket, am I able to deduct them as a charitable donation? If so, how do I enter that?

Yes, you can, so long as you are performing services for a charitable organization such as a church.

How do I deduct them? Do I put them under the charity I traveled with even though I paid for them directly and not through the charity?

You put them under the charity that you provided services to as a cash contribution. Make sure you have an acknowledgement from the charity for your service.
