Married Filing Seperately But Disagree On Itemizing vs Standard Deduction

I'm filing taxes as married but filing separately.  I need to itemize my deductions to get better refund. I understand both spouses would need to itemize or take the standard deduction. However, I don't know how my spouse filed since we do not talk. Regardless, I need to itemize. Suppose she does not agree to itemize. What happens in that situation?

You win itemizing trumps standard deductions every time.  SO...  itemize if it makes better sense for you to do so ... and if your spouse used the standard deduction they will get a letter from the IRS to amend her return.   At that point, you could amend both of your returns to file jointly  IF  you both can agree to it.
