In prior years, the amount I paid to file my taxes was deductible, but I wasn't asked to enter that amount this year. Should I have been?

The tax preparation fee was removed from the tax code as a deduction after tax year 2017.  Unless you are completing a business tax return then it is deductible as a business expense.
