I recently bought a home using a non-occupying co-borrower. I make all payments on mortgage. Is my co-borrower required to include mortgage information on their taxes?

As long as you don't have a rental arrangement with the co-borrower, that individual does not have to include any of the mortgage information on their return.  Mortgage interest and real estate taxes may help someone to increase their refund, but it is not required to claim.
