I did not keep a record of my car mileage at all so I don’t want to claim any in case I’m audited and can’t provide proof, can I still claim insurance?

Worked for Postmates/Caviar... Do I have to have proof of mileage to claim my insurance? I did not keep a record of mileage or gas used.

No. If you are wary about claiming your mileage, you would need the same proof (mileage logs) when you claim actual expenses of gas, oil, insurance, repairs, etc.
