Do you get any IRS forms documenting pay (like 1099-MISC or W-2), or are you paid in cash for services?

You're in the best TurboTax package for your situation - Self Employed. Report total cash paid to you as gross income, and deduct things like supplies and transportation between jobs as prompted by interview questions.

I'm a caretaker and helper and cleaner, etc. for my mother. She is in her 60s and I 40. I live in her apartment because she requires 24 hour care a lot. I receive no payment in actual money form. She pays for food and, because of the MS, I shop for it. What to do?

You have no reportable income, for tax purposes. That's  just family helping family.
