Do I have to provide copies of all charitable giving receipts when mailing my taxes because I donated a car as well?

I normally e-file but need to mail in our tax filing this time because we donated a car last year and need to include the proper forms for that.  We give to several charities every year, will the IRS expect all those giving statements as well since I'm including the one for the car? Or just the one for the car?

No, you don't need to attach copies of all of your receipts.  However, it is a good idea to include the one for the car since that is a donation that is often questioned by the IRS.  That said, make sure to keep all of your receipts for at least 3 years (preferably 5 years) past the filing of your tax return.
