Can I delete charities to which we have donated in previous years, but no longer donate to this year without harming the files for the previous years?

There were charities associated with children's activities and schools. Children are no longer attending those schools.

Some charities to which we donated have merged with others and there may be now one name for a compilation of 5 different charities. I have the single entities listed in previous years, but in 2017 they combined their units into one larger charity. Can I deduct the names of the 5 charities for 2017 and just list the larger charity name?

Yes, deleting the charities on this years tax return has no effect on previous returns that were filed, so you can certainly delete the names of the individual charities and list the larger charity name.
