Can I deduct expenses related to my service as a volunteer ski patroller?

Yes, if you paid for them.  These expenses fall under the category of Volunteer Work in Charitable Deductions. Your direct expenses and the mileage you drive for this work is deductible.  However, your labors themselves are not deductible.  You cannot claim a deduction for the value of your volunteer labor.

I'm assuming that items I purchased for use in my volunteer service such as training books, nsp dues, equipment, clothing and gear, will be itemized in the charitable donation section "items?"

It actually can be put in cash, because you are purchasing the items for use with your charitable work, and not donating the items themselves.
