Can I claim all of the money I spent on gas for my trucks as an expense?

if you used the truck in your business then yes. the deduction will be limited by the ratio of business mileage to total mileage.  you may have the option of using the standard mileage rate rather than actual expenses

 

If you want to use the standard mileage rate for a vehicle you own, you must choose to use it in the first year the vehicle is available for use in your business. Then, in later years, you can choose to use either the standard mileage rate or actual expenses.

When it comes to gas (and only gas), the per-mile deduction for business miles driven (not personal or commuting miles) is better by far.

Just a note that OP is self-employed.  W-2 employees may not take any deductions for this.
