Can I change the default folder for "returns" file that is saved when I exit Turbo Tax? Can I cut and paste the existing file (1st session) to the new folder?
I am concerned that if I cut and paste the existing "returns" file then I may not being able to continue with Turbo Tax in completing my returns.

You can save the .tax20?? file anywhere you want. The only requirement, is that it has to be on the same drive the program is installed on. Typically, that's drive C:. Otherwise, you may have issues with opening the file, or e-filing it.
