Would I say that I lived in another state if it was for a school related Internship?

I live in NC but during the spring I did my internship in NY. Does that count as me living in NY?

No......the internship can be treated like a summer job in a Colorado resort...you are working there (NY) as a non-resident....

You just put NY in as a state in "Other State Income" at the bottom of the Personal Info page.

You remain a full-year NC resident, and you put NY at the bottom of the page and file as a nonresident for that NY income.
