My husband & I moved to MS in 2018. He moved in Feb. and I moved in Aug. We file jointly. What do we put as when we became residents of MS?

The MS part-year tax return does not ask for specific dates as to when you became residents.  It asks for the tax year beginning and tax year ending date for part-year residents you will enter 2018 in both these boxes.
